This is a weekend morning breakfast which features scrambled tofu with vegetables in place of my usual poached eggs. This was not my first time with tofu, but the first time I was trying it scrambled. It was so much better than I expected! Crumbled and added to lightly sautéed vegetables and seasoned with nutritional yeast, paprika and hot dried chilis, like a chameleon it takes on all of their blended flavours. I loved it! It proved to be a lovely high-protein replacement for my usual eggs. I served it simply on top of WW wheat toast and sliced tomato. But I can see that it would have been wonderful with fresh fruit and sliced avocado.

Maybe I didn’t grab your attention with my version of the Saturday Morning Tofu and Vegetable Scramble. Keep it simple right? I recently picked up Sam Turnbull’s book Fuss-Free Vegan recipes she has served up on her blog “It Doesn’t Taste Like Chicken“. Sam recreates and veganizes dishes she loved from her pre-vegan days.

What I love most about this recipe is it’s simplicity and its glorious colour due largely to the addition of turmeric.



You can serve this on toast, but I like to wrap mine in a butter lettuce leaf. (I’m on a “wrap everything in a butter lettuce leaf” kick apparently!)


No, Tofu is not weird….

Tofu is also known as bean curd. It is prepared by coagulating soy milk and then pressing the resulting curds into solid white blocks that vary in softness. So it can be “silken”, “soft”, “firm” or “extra firm”. It has a real subtle flavour so it can be used in both savory and sweet dishes. I used extra firm for this “scrambled” dish but I’ve also used the “soft” for cheesecake (you won’t be able to tell the difference between that version and one made with cream cheese…honest!). It is naturally low in calories and has a relatively large amount of protein.

I know what you are thinking. This is not bake shop worthy? But who cares? This was delicious and even my meat eating husband rated them a 7/10.

So I’m slowly discovering that tofu is not only not weird, it’s versatile and delicious!
